History

Wanås Estate, pronounced “Vannoos”, is a 15th century castle and a modern organic farm producing dairy, dry-aged beef, grain and vegetables. Wanås Castle is situated on what was once the border between Sweden and Denmark and was a site for battles during the Danish-Swedish Wars in the 16th and 17th centuries.

Kristina and Baltzar Wachmeister now live on the estate. Baltzar is in charge of running the estate while Kristina, an architect, is behind the conversion of the listed 18th century buildings into a modern hotel and restaurant, as well as its interiors.

Wanås Restaurant - Farm-to-Table
from the estate.

The spacious restaurant, opened in 2017, is set in a converted 18th century barn with an open kitchen and a large counter where guests and chefs meet in a relaxed way. Guests gather round the large fireplace during chilly nights in the winter, and in the summer-time tables spill out onto the terrace and lawn overlooking the 15th century Wanås Castle and The Art Gallery that is part of the sculpture park.

Wanås Restaurant is a cultural and culinary destination as well as a place for the soul. It is influenced by its surroundings: the forests teeming with game, mushrooms, berries, and the organic farm that produces milk and meat, as well as vegetables. To serve what is grown, hunted and harvested is the base for the restaurant.

Wanås’ own homemade products – cheeses, cold cuts, preserves and pickled or fermented vegetables are on the table for breakfast, lunch, dinner and dessert.
